Egg Barley Noodles Overview

Made from flour and eggs, these interesting egg barley noodles from Hungary are named for their appearance: rough, artisanal, barley-like bits. To prepare, sauté in butter, add salted water to cover, and simmer until the liquid is absorbed. Use in place of pasta or rice, or add to soups and stews.
